Ninja Rice

Serves 4-6

2 Tbs. canola oil, coconut oil, or butter
3 large cloves garlic, minced
1 1/2 cups long-grain rice (Basmati preferred)
1 tsp salt
2 1/2 cups hot water

Heat a 2-qt. saucepan over medium heat.  Add oil of choice and garlic to hot pan and stir.  Add rice and stir to coat. Cook rice a few minutes.  Add salt and stir.  Add hot water to pan and stir.  Cover pan with a tight fitting lid and continue to heat over medium-high heat until lid begins to "sputter".  Turn heat down to low and cook rice for 15 minutes.  Check moisture of pan after 10 minutes.  If needed, add more water.  Replace lid and cook for remaining time.  Remove pan from heat but don't remove the lid.  Let the pan rest until ready to serve.  Fluff rice before serving.
